Pro-Health Medley Potato and Jalapeño Poppers

Pro-Health Medley Potato and Jalapeño Poppers

  • 1 1⁄2 lbs. Pro-Health Flavor Fusion Smart Bite Potatoes
  • 6 slices turkey bacon
  • 2 jalapenos
  • 1 1⁄4 cups low fat shredded cheddar
  • 1 bunch chives
  • 1⁄2 tsp granulated garlic
  • 1 cup light sour cream
  • 1 small can of chipotles in adobe sauce

Start by trimming about 1/8 of an inch off each end of the potatoes and then slice in half. With a small melon baler remove a small scoop from the cut side of the potato. Mix the potatoes in a large bowl with 1 table spoon olive oil, garlic granules, 1 tsp black pepper, and 1 tsp salt. On a lightly greased sheet pan place potatoes face down. Bake the potatoes at 400 degrees for 25- 30 minutes or till potatoes are cooked through. Cook the turkey bacon on a sheet pan at 400 degrees in the oven till crisp. Then dice the turkey bacon in small pieces. Small dice the jalapeños then, in a small skillet add a 1⁄2 table spoon olive oil and sauté the jalapeños till tender. Mix the bacon bits and jalapenos together. Flip the potatoes face up and fill each potato with the bacon and jalapenos then top with cheese. Place back in the oven to melt cheese for about 3 minutes. In a food processor mix 3 chipotles and 3 tsp of the adobe sauce with sour cream and 1⁄4 tsp salt. If you want a more spicy sauce add more chipotles. Chop the chives and sprinkle on of the poppers. Place the Popper on a plate and serve the chipotle sour cream in a bowl for dipping.
