Parmesan Vinaigrette Smart Bite Indigo Blues Potatoes

Easy Preparation
Potatoes are washed and ready to steam!
Do not puncture or open this bag prior to microwaving.
- Evenly distribute potatoes in bag
- Place unopened bag in microwave, SEAM SIDE UP
- Microwave on HIGH for 8 minutes
- Let stand for 1 minute in microwave to cool
- Remove carefully – contents will be hot & bag will be full of steam
- Cut bag open and pour potatoes into large bowl
All you do:
- Microwave potatoes according to package directions.
- Meanwhile, mix mustard and vinegar together in a small bowl. Gradually pour in olive oil, whisking until thoroughly blended. Stir in parmesan cheese, chives and red onion.
- Gently toss cooked potatoes in dressing to coat. Season to taste with salt and pepper. Serve hot, warm or cold.
