Mexican Stuffed Pro-Health Potatoes

Preheat the oven to 425 degrees F. Bake potatoes for 60 – 80 minutes. Let potatoes cool. Slice potatoes in half, lengthwise. Scoop out each half and mash with the milk, cheese, cilantro, onions and oregano. Fill potato skins with the mashed potatoes and top with corn chips. Bake for 15 – 20 minutes, or until chips start to brown. Serve with salsa on the side.
