Light Scalloped Pro-Health Potatoes

  • 6 Pro-Health Potatoes
  • 3 cups Chicken Broth
  • 3 Garlic Cloves, minced
  • 1/2 cup Parmesan Cheese, grated
  • 1 tbsp. Fresh Thyme
  • 1 tsp. Salt
  • 1 tsp. Pepper

Thinly slice potatoes and layer in a medium casserole dish. Bring broth, garlic, thyme, salt and pepper to a boil. Pour over potatoes and top with parmesan cheese. Bake at 350 degrees F. for about 90 minutes, or until top is brown, broth is absorbed and potatoes are tender.
