Garlic & Onion Pro-Health Mashed Potatoes

  • 1 lb. Pro-Health Potatoes
  • 1/4 cup Onion, diced
  • 8 cloves Roasted Garlic, chopped
  • 1/4 cup Evaporated Skim Milk
  • 2 tsp. Butter
  • 1 tsp. Pepper
  • 2 tsp. Salt

Dice potatoes into small cubes and place in a saucepan with cold water. Bring to a simmer until potatoes are tender. Caramelize onions in a saucepan. Mix all ingredients together in a large bowl with a large spoon or hand mixer.
